Steps to make khuc cake:
- Step 1: Clean the sticky rice and mung beans, soak in water for about 3-4 hours before cooking.
- Step 2: Mix the grinded khuc leaves with water, filter carefully 2-3 times to extract the khuc leaf essence (Important step for a softer and smoother crust).
- Step 3: Mix glutinous rice flour with water extract from khuc leaves, add a pinch of salt, cooking oil, knead well until the dough is just elastic, avoid letting the dough dry or sticky.
- Step 4: Cook the green beans until soft, then crush them into a smooth paste while still hot.
- Step 5: Cut the pork into small pieces, marinate briefly with fish sauce, onions, pepper for about 30 minutes, then stir-fry the meat until firm.
- Step 6: Mix the finely ground mung beans with the pork.
- Step 7: Roll the dough and filling into small, evenly sized balls.
- Step 8: Place the dough ball in the palm of your hand, press it flat, then add the filling and shape into a ball.
- Step 9: Washed sticky rice, drain well, then cover the cake balls tightly.
- Step 10: Place the cakes in a steamer, steam the cakes until the sticky rice is soft and cooked.
