Dry Wheat Noodles are a familiar specialty of Hue. They are often used to make minced meat noodles, crab cake noodles, snakehead fish noodles, seafood noodles... all delicious.

Udon Noodles

Option 1: Cook the pot of water until boiling, add the dry noodles and cook for about 10 minutes until the noodles reach the desired softness, then remove and rinse with cold water. Then place in a bowl, pour the broth (cooked separately) over and enjoy.

Option 2: Wash the dried banh canh noodles with cold water to clean, then wait for the broth to boil, put them in to cook together with the broth, about 10-15 minutes until they are soft enough, then scoop out and ready to eat
